A Day Of Rest In Dallas

Another crisp air morning, 36ยบ out, here in J. R. country for those of us who remember Dallas,  I wonder if people still go to see South Fork?  It looks like another stellar day here in Dallas, a great morning to get my first required oil change on my new car.  Fortunately, the dealer is less than three miles a way.

We all kind of kicked back yesterday, Sunday, hanging out at the house all day, not really wanting to go anywhere, just enjoy the morning and afternoon.  I did get a couple of walks in with Cody, enjoying the sun and cool air, the college banners flying from the homes, like Baylor, Oklahoma, Texas, Texas & M and Texas. No Ohio State Buckeye banners, no Michigan Go Blue in this neck of the woods.  And the yards in this area of Dallas are quite small, the homes close to to each other,  to the street, with an alley in the backyard as access to your garage.   We did go to Costco, fairly early but never early enough to avoid the crowd, the traffic.  In fact, it was as busy as I have seen a Costco on a Sunday morning.  As usual, we went in needing nothing, left with quite a bit that we did not know we needed, like a Food Saver Vacuum Sealer! And as long as we both live into our 90's, it will be a money saver! That's Costco.
Just What We Needed
Much of the afternoon, we had the NFL game on and Dallas finally won a game, to rise out of the cellar from the Cleveland Brown.  Evie and Beth worked on prepping for dinner, our prime rib extravaganza, and Evie's sister, Jean, who moved to Denton, just outside of Dallas a few years ago was coming to dinner.  She arrived around 4:15, took a long tour of the house, admiring the paintings by Rami's sister and Beth, and we then sat down with wine and a couple great cheeses to catch up on her life, her grandsons.

Dinner worked out well; the beef was done perfectly and Rami seared it for a few minutes on the grill to give it some color.  The cuts were a uniform medium rare, tender and juicy, the way we love it.  Beth made popovers, the salad and Evie made a mushroom gravy and mashed potatoes.  Everyone raved about the meat, the sous-vide method of cooking any kind of meat to a uniform temperature.
Personally, I loved the popovers, a simple bread like concoction that goes so well with prime rib.  No sweetness, just a buttery, light roll.  Jean also brought a red wine that went perfectly with the dinner.

We sat around talking until 9:00, catching up Jean's grandchildren, her move to a new home in a retirement community, and our coming up visit to her daughter's farm, about 70 miles from here.  We are going there late Tuesday morning, so we can get home before rush hour.  We were all up in bed either to watch TV or read by 10;15, a wild and crazy bunch.

It's now 9:35, Central Time and Beth is back from taking Marisa to school.  No buses here in University Park.  And Mitch and Rami both left around 7:30, so it's going to be an empty house.
